dc.description.abstractThis work presents the importance of the role of the sommelier in the history and society through the times, in its office of serving the wine. This position was of a great officer in the court, whom the sovereigns held in high esteem and consideration. During the presentation of the work we took into account the illustrative steps of this honor given to the officers of the beverage service.We begin by referring to the etymology of the term "escanção" and the attempt of the origin even, presenting several currents of analysis and existing records, of the basic meaning of the term, which means "the one who divided the wine, who poured the wine into the cups of the guests "Then we analyze the office in Greco / Roman mythology so that, in the following paragraph, we finish chapter I (one) with the analysis of its course in the Holy Bible.In chapter II (two) it refers to the post of scouring of the Medieval Age, passing through the Modern Age to our time and how this position was implemented in the European court, serving the king in his person, both in the public domain and in privacy. We demonstrate the importance of this, associated with the other official bodies that sustained this regal power throughout the ages.In chapter III (third), we focus on the importance of the magazine "O Escanção", belonging to the Associação dos Escanções de Portugal, in divulging the techniques inherent in the craft and the importance it represented for the dissemination of the class. In the last chapter (IV) we presented several possibilities of combining wines with the different portuguese delicacies of a meal, where, in an unpublished demonstration belonging to the author, tables are presented in order to demonstrate the various combinations of Portuguese delicacies with Portuguese wines.eng
dc.description.abstractEste trabalho apresenta a importância do papel do escanção na história e sociedade através dos tempos, no seu ofício de servir o vinho. Este cargo era de um grande oficial na corte, a quem os soberanos tinham em alta estima e consideração. Durante a apresentação do trabalho tivemos em conta os passos ilustrativos dessa honra conferida aos oficiais do serviço de bebidas.Começámos por referir a etimologia do termo "escanção"e a tentativa da origem mesmo, apresentando várias correntes de análise e dos registos existentes, do sentido básico do termo, que significa “aquele que repartia o vinho, que deitava o vinho nas taças dos convivas”De seguida analisamos o ofício na mitologia greco/romana para, no seguinte parágrafo, terminámos o capítulo I (um) com a análise o seu percurso na Bíblia Sagrada. No capítulo II (dois) é referente ao cargo de escanção da Idade Medieval passando pela Idade Moderna até ao nosso tempo e como este cargo estava implementado na corte europeia, servindo o rei na sua pessoa, quer nos domínios públicos, quer na privacidade. Demonstramos a importância deste, associado com os outros órgãos oficiais que sustentavam esse poder régio ao longo dos tempos.No capítulo III (terceiro) debruçamo-nos sobre a importância da revista "O Escanção", pertencente à Associação dos Escanções de Portugal, na divulgação das técnicas inerentes ao ofício e a importância que ela representou para a divulgação da classe. No último capítulo apresentámos várias possibilidades da combinação dos vinhos com as diferentes iguarias, de uma determinada refeição, onde, numa demonstração inédita pertencente ao autor, são apresentados quadros de forma a demonstrar as variadas combinações das iguarias portuguesas com os vinhos portugueses.por
